二、Method:
做法：
1.Wash and devine the shrimps, dry them up with the kitchen towel.
1.蝦仁洗凈去泥腸，用紙巾抹去多余水份。
2.Stir-fry the onion with olive oil over the medium heat until the onion transparent, about 3 minutes. Add in minced garlic and chili. Stir fry until the garlic appears golden in colour.
2.用中火以橄欖油炒香洋蔥末至透明狀，約3分鐘，加入蒜末和辣椒，炒至蒜呈金黃色。
3.Add in diced tomatoes and dry parsley. Flavoured with a little salt.
3.倒入蕃茄丁，加入歐芹末，加入少許鹽調味。
4.Turn the heat down and stir briefly and let cook for about 5 minutes. Add in shrimps and stir until all the shrimps coated with the sauce. Cover and simmerfor 3-5 minutes until the shrimps are cooked. Flavour with a little more salt if desired.
4.轉小火，稍微翻炒，大約5分鐘。將蝦仁入鍋，讓每一只都可沾到醬料，蓋上鍋蓋煮3-5分鐘至蝦仁熟，可視個人口味再加入少許鹽。
